From Fermentation to Flavor – A Champion’s Journey
L’grow
Wagyu was born in Japan, but it’s in Australia where it found its backbone. Japanese wagyu, for all its prestige, can be too rich—so buttery it forgets to taste like beef. Australian wagyu walks the tightrope: deep, bold flavor with balanced texture. Our cattle forage on native pasture, then finish on a custom grain diet that builds signature marbling—bringing together intensity, structure, and unforgettable flavor.
At the center of our program is the Sandalwood feedlot, one of Australia’s oldest and most respected. Set in the fertile heart of the Darling Downs, Sandalwood has been raising high-performance wagyu since 1989. It’s not just about history—it’s about access to the best grains, sun-drenched hay, and the kind of know-how that only decades in the game can earn. We hand-select wagyu from top-tier farms across Eastern Australia and back every decision with serious data—tracking BMS, performance, and quality to deliver consistency chefs can count on.
Our cattle are raised on a premium mix of wheat, protein powders, and house-produced corn silage—feeds that cost up to three times more than the standard but deliver results you can taste. Wheat brings more protein than barley, and corn silage, rare in Australia, is packed with nutrients. We grow it ourselves, exclusively for L’grow cattle. We’ve also adopted Korean fermented feeding techniques inspired by Hanwoo beef—breaking down complex carbs, enriching gut health, and maximizing nutrient absorption. It’s labor-intensive, but the payoff is undeniable.
In 2025, we won 1st place in the Commercial Wagyu MS 5–7 class at the World Branded Beef Competition, taking the title of Champion in one of the most competitive categories—alongside six other medals earned across the event. We’ve also taken home gold three times before, in 2022 and 2024. Judges have praised our wagyu as “a great eating experience” with notes of honey, caramel, toasted herbs, and lasting juiciness. World-class chefs already know our name. Now we’re bringing it to the U.S.—wagyu that hits harder, tastes deeper, and tells a real story from pasture to plate.
