    Rich Flavor, Tender Bite

Very flavorful and tender. Perfect sear brings out the best in this Wagyu. Might slice a bit thicker next time.

Frequently Asked Questions

What’s the difference between a New York Strip and a Ribeye?

The New York Strip is known for its firm texture and bold, beef-forward flavor, while the Ribeye contains more internal fat and marbling, resulting in a richer, juicier bite. Ribeye is generally more indulgent, whereas NY Strip offers a cleaner, more structured steak experience.

What’s the difference between Australian, American, and Japanese Wagyu?

The main differences come from genetics, feeding programs, and grading systems.

  • Japanese Wagyu is the original breed, known for extreme marbling and a buttery texture.
  • Australian Wagyu balances richness with structure, often less intense than Japanese but still very luxurious.
  • American Wagyu offers a more familiar steakhouse flavor with elevated marbling and tenderness.
How is Wagyu different from non-Wagyu beef?

Wagyu cattle are genetically predisposed to produce higher levels of intramuscular fat (marbling). This results in a more tender texture, richer flavor, and a melt-in-your-mouth experience compared to conventional beef, which has less marbling and a firmer bite.

What makes Kobe beef different from other Wagyu?

Kobe beef is a specific type of Japanese Wagyu that comes exclusively from Hyogo Prefecture in Japan. It must meet strict criteria related to breed, lineage, marbling score, and processing standards. All Kobe beef is Wagyu, but not all Wagyu is Kobe.

What do BMS scores mean?

BMS stands for Beef Marbling Score, a scale used to measure the amount and distribution of intramuscular fat. Higher BMS scores indicate more marbling, resulting in richer flavor and increased tenderness. Different customers prefer different BMS levels depending on how rich they want their steak to be.

Are Wagyu tasting boxes good for first-time buyers?

Yes. Tasting boxes are designed to let you experience different origins and cuts side by side. They’re ideal for first-time Wagyu buyers who want to understand how marbling, origin, and cut affect flavor and texture.

How should I cook Wagyu steak for best results?

Wagyu is best cooked simply. High heat, minimal seasoning (salt only), and shorter cook times allow the natural flavor and fat to shine. Because of its richness, Wagyu is often best enjoyed in smaller portions than traditional steaks.

How is my order shipped?

All orders are shipped frozen using insulated packaging and dry ice or gel packs to maintain proper temperature during transit. This ensures the product arrives in excellent condition, regardless of distance.

How do you ensure freshness and quality during shipping?

Each steak is vacuum-sealed immediately after processing and kept frozen until shipment. Our packaging is designed to maintain safe temperatures throughout delivery, preserving flavor, texture, and food safety.

How long can I store Wagyu once it arrives?

If kept frozen, Wagyu can be stored for several months without loss of quality. Once thawed, it should be consumed within 1–2 days and kept refrigerated. Refreezing is not recommended for best texture and flavor.
